So last week I wrote about zucchetti and promised to give you a meat sauce to use with it. True to my word, here it is…and it’s easy and pretty quick (only cooks for 30 minutes)! It makes a lot, but the great news is it’s one of those foods that freezes beautifully. I freeze it in individual portions and then just pull one out of the freezer whenever I want a quick meal.
This is one of those recipes where you can use any ground meat and still end up with a tasty sauce. You can use beef, buffalo, pork, chicken, turkey, veal, ostrich, or sausage or any other ground meat or combination of meats you can think of.

Mama’s Meat Sauce
Serve this sauce with zucchetti, spaghetti squash or on top of baked potatoes.
1 pound ground meat
1 cup chopped onion
3 cloves garlic, minced
1 (14 to 16-ounce) can crushed tomatoes
1 (14 to 16-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
1/2 cup water
1/3 cup chopped fresh parsley
2 tablespoons chopped fresh basil or 1/2 teaspoon dried basil
1 bay leaf
1/4 teaspoon dried thyme
1/4 teaspoon dried red pepper flakes
Salt to taste
In a 3-quart saucepan, over medium high heat, cook the meat, onion, and garlic until the meat is no longer raw, about 6 minutes.
Add the crushed tomatoes, diced tomatoes, tomato sauce, water, parsley, basil, bay leaf, thyme, and pepper flakes.
Bring to a boil; reduce heat and simmer, uncovered, 30 minutes. Discard bay leaf, season with salt to taste.
Serve with Zucchetti
